Friends Salad - WW

The “Jennifer Aniston Salad”  
We modified this one just a bit to make it gluten friendly. Allegedly, this is what JA ate daily on the set of Friends. 
Quinoa, tiny diced cucumber and red onion, chick peas (we are roasting them for extra flavor and crunch), parsley, mint, feta, and a simple dressing with olive oil and fresh lemon juice. 

Add a side of chicken or shrimp make this a heartier dish.

Protein Details (serves 1, protein packaged separately):
CHICKEN: 4 oz of sliced perfectly cooked herb marinated chicken breast 
SHRIMP: 5 U25 tail on shrimp, marinated and then roasted
