Roasted cauliflower, light and fluffy orzo, crisp arugula, slivered red onions, dried cranberries, feta cheese, and a slightly sweet lemon vinaigrette. Filling but not heavy. Full of good for you nutrients. 

Add a side of chicken or shrimp make this a heartier dish.

CHICKEN: 4 oz of sliced perfectly cooked herb marinated chicken breast 
SHRIMP: 5 U25 tail on shrimp, marinated and then roasted
